This dish is made with flank steak, which is lean and has long, shreddy fibres, and is how the dish earned the name “old clothes”. There are few dishes as quintessentially Cuban as ropa vieja and when this is slow cooked, the thin strands of shredded beef are simmered and served in a rich and flavoursome sauce of tomatoes, onions, bell peppers, potatoes, onion, garlic, cumin, fresh thyme and other spices. It is positively PACKED with flavour!!
